Fresh-Frozen Whole Sea Urchin Uni

Sea urchin roe: five lobes of bright orange roe to a shell, with a soft, grainy surface and a clean sheen. The roe is left whole and unbroken, lifted clear of the shell so nothing of the dark interior is left clinging to it.

Uni is rich and buttery with a light marine sweetness and needs no cooking at all. Spoon it straight from the shell, fold it through warm rice or pasta, or set it on a dish just before it goes to the table.

Keep frozen at -18°C or below. Thaw in the refrigerator and cook thoroughly before eating.
