Fresh Chilled Jellyfish Salad Sheets

Jellyfish cut into wide, ribbon-like sheets: translucent amber, lightly rippled, and glistening wet. The sheets are pliable rather than brittle and hold a fold without tearing.

Jellyfish keeps a firm, springy crunch and takes on whatever it is dressed with. Serve the sheets chilled with black vinegar, sesame oil and a little chilli, or fold them through a cold dish with shredded cucumber and spring onion.
