Fresh Whole Yellow Croaker Fish

Whole yellow croaker, gutted and cleaned and left otherwise intact. The body is deep rather than long, with a golden yellow sheen running along the flanks and belly and a paler silver-white underside. The scales are fine, the eye is clear, and the fins show the same warm gold as the body.

The flesh is fine, soft and delicately sweet, and it steams beautifully on the bone. Steam the fish whole with ginger and spring onion, pan-fry it until the skin crisps, or braise it in soy and rice wine.

Keep frozen at -18°C or below. Thaw in the refrigerator and cook thoroughly before eating.
